Pineapple Salsa

Pineapple in the sun.

I've been experimenting with making different types of salsa. This is summer food!

Pineapple Salsa

From The New Moosewood Cookbook
By Mollie Katzen (1977)

2 cups minced fresh (or canned) pineapple
2 medium cloves of garlic, minced
3 tablespoons fresh mint
2 tablespoons fresh lime juice
1/4 teaspoon salt
1/4 teaspoon cumin
cayenne, to taste

15 minutes to prepare (with fresh pineapple) or 5 minutes with canned.
Makes 2 cups.

Combine everything, cover tightly and refrigerate. Delicious with black bean soup!
